  • For best results, use brown rice pad Thai noodles or linguine.
  • Make sure to use unsalted peanuts and ketchup for this recipe.

  • Substitute canola oil with olive oil. The benefit of this substitution is that olive oil is a healthier option than canola oil and is a great source of monounsaturated fatty acids, which are beneficial for heart health.
  • Substitute peanuts with cashews. The benefit of this substitution is that cashews are a good source of healthy fats, vitamins, and minerals, and they are also lower in calories than peanuts. Additionally, cashews have a milder flavor than peanuts, which may be more desirable for some people.

Vegetarian Option Substitute the shrimp with 8 ounces of firm tofu. Fry the tofu with the scallions and egg as directed in the recipe, and proceed with the rest of the instructions.

Spicy Thai Cucumber Salad - This refreshing salad is the perfect accompaniment to the spicy shrimp noodles. It's made with cucumbers, red onion, bell pepper, and a flavorful dressing of lime juice, fish sauce, and chili garlic sauce, making it just as zesty as the noodles.

Spicy Thai Fried Rice: This fried rice dish is a great complement to the Thai Cucumber Salad. It's made with jasmine rice, egg, onion, garlic, chili, and Thai basil, and is packed with flavor and spice. The combination of the spicy fried rice and the refreshing cucumber salad makes for a delicious and balanced meal.
