Step 1: Cook noodles according to package directions.
Step 2: In a large skillet on high heat the oil and then add the scallions and shrimp; cook stirring for a minute or tow or until scallions are bright green and then add the egg, cook, stirring constantly for another minute or until egg and shrimp are cooked. Stir in noodles and half of the peanuts, ketchup, lime juice, sriracha, fish sauce and water; toss.
Step 3: Serve in bowls and sprinkle with cilantro and peanuts.
