Ingredients

The ingredients are:
  • 6 ounces dry rice noodles (brown rice pad Thai noodles or use linguine, uncooked)
  • 3 tablespoons oil (canola)
  • 2 cups scallions, sliced (this is about 2 bunches of scallions)
  • 8 ounces shrimp (peeled and deveined)
  • 1 egg
  • 1/3 cup peanuts (unsalted and chopped)
  • 3 tablespoons ketchup (unsalted is best)
  • 2 tablespoons lime juice
  • 1 1/2 tablespoons sriracha chili sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon water
  • 2 tablespoons cilantro, chopped

How to Make

  • Step 1: Cook noodles according to package directions.

  • Step 2: In a large skillet on high heat the oil and then add the scallions and shrimp; cook stirring for a minute or tow or until scallions are bright green and then add the egg, cook, stirring constantly for another minute or until egg and shrimp are cooked. Stir in noodles and half of the peanuts, ketchup, lime juice, sriracha, fish sauce and water; toss.

  • Step 3: Serve in bowls and sprinkle with cilantro and peanuts.
