Step by Step Method

Step 1

Toss shrimp with minced garlic, set aside.

Step 2

Sauté onion and celery in oil until just tender.

Step 3

Add chopped tomatoes and bell peppers, sauté about 6 minutes longer.

Step 4

Add tomato sauce, sugar, basil, bay leaf, salt and peppers.

Step 5

Bring to a boil, reduce heat and cook 5 minutes.

Step 6

Add shrimp and garlic, turn up heat and return to boil.

Step 7

Reduce heat and simmer 15 minutes, stirring occasionally.

Step 8

Add slurry last, cook until thickened.

Step 9

Adjust seasonings.

Step 10

Let mixture stand for 5 minutes to blend flavors.

Step 11

Serve over a mound of steamed white rice.

Step 12

Garnish with parsley, green onions.
