Ingredients

The ingredients are:
  • 1 pound shrimp, peeled
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 cup onion, chopped
  • 1 rib celery, chopped
  • 1 cup tomatoes, chopped
  • 1 cup tomato sauce
  • 1 teaspoon sugar
  • 1 cup bell pepper ,chopped
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/16 teaspoon tabasco pepper sauce,to taste
  • Slurry
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • Garnish
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons green onions, minced

How to Make

  • Step 1: Toss shrimp with minced garlic, set aside.

  • Step 2: Sauté onion and celery in oil until just tender.

  • Step 3: Add chopped tomatoes and bell peppers, sauté about 6 minutes longer.

  • Step 4: Add tomato sauce, sugar, basil, bay leaf, salt and peppers.

  • Step 5: Bring to a boil, reduce heat and cook 5 minutes.

  • Step 6: Add shrimp and garlic, turn up heat and return to boil.

  • Step 7: Reduce heat and simmer 15 minutes, stirring occasionally.

  • Step 8: Add slurry last, cook until thickened.

  • Step 9: Adjust seasonings.

  • Step 10: Let mixture stand for 5 minutes to blend flavors.

  • Step 11: Serve over a mound of steamed white rice.

  • Step 12: Garnish with parsley, green onions.
