"I know what you might be thinking,'Ho Hum, Another meatloaf recipe ". Well your right, but I think the secret ingredient sets this recipe apart from any other meatloaf .Please feel free to adjust any of the seasonings or veggies to suit your own personal tastes. Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

While oven is preheating, mix in a large bowl all ingredients except for the 1/8 cup of BBQ sauce.

Step 3

Prepare a 2 quart baking dish with cooking spray.

Step 4

Pour meatloaf into dish, and free form into a loaf shape.

Step 5

Bake for 45 minutes,then drain if needed.

Step 6

Take remaining BBQ sauce and spread over top and sides.

Step 7

Return meatloaf to over and bake for 10 to 15 minutes.

Step 8

Let meatloaf "rest " for 10 minutes, serve and enjoy. :).

we especially liked the onion rings which added extra flavor to the meat. Sweet Baby Ray's BBQ sauce was our choice and I added a spoonful of mustard to it. It was was a good tasting meatloaf.

Made for the Culinary Quest & the Agents of QUEST - I loved this meatloaf, mainly because I love the BBQ flavor & using French-fried onions. They are used a lot here in Iceland as toppings mostly for hot dogs, casseroles, potatoes, veggies, etc. I admit to adding a heaping tbsp of brown sugar to the BBQ sauce topping as a pers pref. Great flavor, easy-fix & yummy meal. Thx for sharing this recipe.

Really tasty meatloaf! I made this for sandwiches , which were enjoyed on pretzel rolls with Monterey Jack cheese, sliced garden tomatoes, lettuce, and yes, a slice of grilled Vidalia onion. The bbq sauce on the meatloaf added enough flavor that we didn't use any extra sandwich spreads, either. Loved the French's fried onions in this, too (can you believe that I had never tried them before this?!). Thanks for posting, shapeweaver! Made for Culinary Quest I "Tribute to the Onion" challenge.
