Step by Step Method
Step 1
Heat oven to 400 degrees.

For crust:

Cream together butter, sugar, and eggs until well mixed.

Add the flour and salt; mix until a soft dough forms.

Pat half the dough evenly onto the bottom of a 9-inch square pan; set aside.

For Cherry Filling:

Stir together pie filling, both sugars, tapioca, and extract.

Spoon on top of crust in pan.

Pick up small pieces of remaining crust mixture and flatten with your fingers and scatter around on top of cherry filling, using about a tablespoon at a time, and covering the filling.
Step 10
Sprinkle the top crust evenly with the 1 Tablespoon of sugar.
Step 11
Bake for 30 to 35 minutes, or until the top crust is a deep golden brown and cooked through.
Step 12
Remove from oven and place pan on a wire rack to cool slightly.
