Step 1: Heat oven to 400 degrees.
Step 2: For crust:
Step 3: Cream together butter, sugar, and eggs until well mixed.
Step 4: Add the flour and salt; mix until a soft dough forms.
Step 5: Pat half the dough evenly onto the bottom of a 9-inch square pan; set aside.
Step 6: For Cherry Filling:
Step 7: Stir together pie filling, both sugars, tapioca, and extract.
Step 8: Spoon on top of crust in pan.
Step 9: Pick up small pieces of remaining crust mixture and flatten with your fingers and scatter around on top of cherry filling, using about a tablespoon at a time, and covering the filling.
Step 10: Sprinkle the top crust evenly with the 1 Tablespoon of sugar.
Step 11: Bake for 30 to 35 minutes, or until the top crust is a deep golden brown and cooked through.
Step 12: Remove from oven and place pan on a wire rack to cool slightly.
