Step 1

Heat oven to 450 degree Fahrenheit.

Step 2

Season pork loin with salt and pepper.

Step 3

In bowl, combine remaining ingredients.

Step 4

Rub herb-mustard-mixture evenly over pork.

Step 5

Place pork in roasting pan and roast for 10 minutes.

Step 6

Reduce oven temperature to 250 degree Fahrenheit.

Step 7

Roast for 1 hour more or until inserted thermometer reads 160 degrees Fahrenheit.

Step 8

Transfer pork loin to platter, cover loosely with foil.

Step 9

Let sit 15 minutes before slicing.

This recipe makes a deliciously coated succulent porkloin roast. I used dried herbs and since when I opened my roast and found two 1.5 pound roasts. So I roasted them at 450 for 10 minutes as written and then 250 degree F oven for 40 minutes. Made for Billboard tag.
