Step 2: Season pork loin with salt and pepper.
Step 3: In bowl, combine remaining ingredients.
Step 4: Rub herb-mustard-mixture evenly over pork.
Step 5: Place pork in roasting pan and roast for 10 minutes.
Step 6: Reduce oven temperature to 250 degree Fahrenheit.
Step 7: Roast for 1 hour more or until inserted thermometer reads 160 degrees Fahrenheit.
Step 8: Transfer pork loin to platter, cover loosely with foil.
Step 9: Let sit 15 minutes before slicing.
