Step by Step Method

Step 1

Preheat oven to 400ºF. Grease pie plate or spray with pan spray.

Step 2

In a bowl, whisk together cornmeal, corn, jalapeño, shallot and garlic salt.

Step 3

Add oil, eggs and cilantro and whisk until completely combined with cornmeal mixture.

Step 4

Gently stir in 1/2 cup of the cheese.

Step 5

Pour into pan and sprinkle with rest of cheese.

Step 6

Bake for 33 - 40 minutes or until toothpick inserted comes out clean.

Step 7

Let cool for a bit before slicing into servings.

This is a delicious cornbread, though it’s more of a spoon bread rather than the traditional cornbread. Made a great side and I kept on picking at it, yeah, it brought out the pick-pick side of me, or shall I say, us, considering the hubs picked more than I did! I don’t know if it’s because I’m so used to having a bit of sweetness in cornbread, but to some pieces, I sprinkled a little raw sugar and liked it both ways, with and without the sugar sprinkling. Thank you, Linky, for sharing. Made it for Best of 2023 as recommended by Mikekey.

Been making a similar recipe for years but not with cilantro. Really loved that addition. This went well with my crockpot chili. I used sharp cheddar.
