Step 1

Preheat oven to 400ºF. Grease pie plate or spray with pan spray.

Step 2

In a bowl, whisk together cornmeal, corn, jalapeño, shallot and garlic salt.

Step 3

Add oil, eggs and cilantro and whisk until completely combined with cornmeal mixture.

Step 4

Gently stir in 1/2 cup of the cheese.

Step 5

Pour into pan and sprinkle with rest of cheese.

Step 6

Bake for 33 - 40 minutes or until toothpick inserted comes out clean.

Step 7

Let cool for a bit before slicing into servings.
