Step 1: Preheat oven to 400ºF. Grease pie plate or spray with pan spray.
Step 2: In a bowl, whisk together cornmeal, corn, jalapeño, shallot and garlic salt.
Step 3: Add oil, eggs and cilantro and whisk until completely combined with cornmeal mixture.
Step 4: Gently stir in 1/2 cup of the cheese.
Step 5: Pour into pan and sprinkle with rest of cheese.
Step 6: Bake for 33 - 40 minutes or until toothpick inserted comes out clean.
Step 7: Let cool for a bit before slicing into servings.
