Ingredients

The ingredients are:
  • 1/3 cup oil (canola or similar oil)
  • 1 cup cornmeal (yellow)
  • 1 can (15 ounce) cream style corn
  • 1/4 cup jalapeño (pickled, diced)
  • 2 tablespoons shallots, minced
  • 1 teaspoon garlic salt (or to taste)
  • 3 eggs, lightly beaten
  • 1/3 cup cilantro, chopped (fresh)
  • 1 1/4 cup shredded cheddar cheese (or Mexican blender cheese, divided)

How to Make

  • Step 1: Preheat oven to 400ºF. Grease pie plate or spray with pan spray.

  • Step 2: In a bowl, whisk together cornmeal, corn, jalapeño, shallot and garlic salt.

  • Step 3: Add oil, eggs and cilantro and whisk until completely combined with cornmeal mixture.

  • Step 4: Gently stir in 1/2 cup of the cheese.

  • Step 5: Pour into pan and sprinkle with rest of cheese.

  • Step 6: Bake for 33 - 40 minutes or until toothpick inserted comes out clean.

  • Step 7: Let cool for a bit before slicing into servings.
