"A quick and easy recipe that can be made with items found in most pantries. Inspired by a recipe that contained ground beef but I tweaked it a bit to suit our tastes and turned it in to a meatless version."

Step by Step Method

Step 1

Preheat oven to 350.

Step 2

Saute onion in fat until soft.

Step 3

While onion is cooking, combine refried beans and taco seasoning in a small bowl. When onion is cooked, stir in bean mixture to combine and heat through.

Step 4

In another bowl, combine chiles, enchilada sauce and soup. Whisk thoroughly to combine.

Step 5

Spoon bean mixture in to tortillas and roll up. Place in a casserole dish, seam side down.

Step 6

Top with soup mixture then sprinkle on cheese.

Step 7

Bake 25 minutes or until cheese is melted.
