Ingredients

The ingredients are:
  • 1/2 small onion, chopped
  • 1 tablespoon bacon fat (or whatever oil you have on hand but I use the bacon fat for flavor)
  • 1 (15 ounce) can Refried Beans
  • 1 package taco seasoning mix
  • 1 (7 ounce) can chopped green chiles
  • 1 (10 ounce) can enchilada sauce
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
  • 8 tortillas (really depends on their size and how full you stuff the burritos)
  • 2 cups shredded cheddar cheese

How to Make

  • Step 1: Preheat oven to 350.

  • Step 2: Saute onion in fat until soft.

  • Step 3: While onion is cooking, combine refried beans and taco seasoning in a small bowl. When onion is cooked, stir in bean mixture to combine and heat through.

  • Step 4: In another bowl, combine chiles, enchilada sauce and soup. Whisk thoroughly to combine.

  • Step 5: Spoon bean mixture in to tortillas and roll up. Place in a casserole dish, seam side down.

  • Step 6: Top with soup mixture then sprinkle on cheese.

  • Step 7: Bake 25 minutes or until cheese is melted.
