Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Place the butter in a 13 x 9″ casserole dish and place dish in the oven so the butter melts.

Step 3

After the butter has melted, remove from oven but keep oven on.

Step 4

In a large bowl, combine the shrimp, RAW rice (do not cook first!), French onion soup, cream of chicken soup, Rotel, diced yellow onion, diced red pepper, salt and pepper to taste.

Step 5

Stir well to combine.

Step 6

Pour mixture over the melted butter.

Step 7

Cover dish tightly with foil and bake for 30 minutes.

Step 8

After 30 minutes, stir well.

Step 9

Re-cover dish and cook for an additional 45 minutes

Step 10

Let set 5 minutes covered out of the oven. When done, the rice should be fluffy and have absorbed all liquid.
