Ingredients

The ingredients are:
  • 1 1/2 pounds raw shrimp, deveined with shells and tails off
  • 14 ounces raw white rice (2 cups)
  • 6 tablespoons butter
  • 10 ounces cream of chicken soup (1 can)
  • 10 ounces French onion soup (1 can)
  • 10 ounces Rotel, diced tomatoes & green chilies (1 can)
  • 1 teaspoon salt
  • 1 cup yellow onion, diced
  • 1 cup red bell pepper, diced
  • 1/2 teaspoon pepper

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Place the butter in a 13 x 9″ casserole dish and place dish in the oven so the butter melts.

  • Step 3: After the butter has melted, remove from oven but keep oven on.

  • Step 4: In a large bowl, combine the shrimp, RAW rice (do not cook first!), French onion soup, cream of chicken soup, Rotel, diced yellow onion, diced red pepper, salt and pepper to taste.

  • Step 5: Stir well to combine.

  • Step 6: Pour mixture over the melted butter.

  • Step 7: Cover dish tightly with foil and bake for 30 minutes.

  • Step 8: After 30 minutes, stir well.

  • Step 9: Re-cover dish and cook for an additional 45 minutes

  • Step 10: Let set 5 minutes covered out of the oven. When done, the rice should be fluffy and have absorbed all liquid.
