Step by Step Method
Step 1
Preheat oven or grill to 425 degrees F.
Step 2
In a 8 or 9 inch square pyrex dish, toss cubed sweet potatoes with half of melted coconut oil. Stir until coated.
Step 3
Add salt and stir until evenly distributed.
Step 4
Bake in the preheated oven or grill for 20 min, stirring halfway through, until sweet potatoes just barely start to brown. If using grill, place on top rack or on indirect heat.
Step 5
While the sweet potatoes are baking: stir the remaining coconut oil into the apples. Add maple syrup and cinnamon and stir.
Step 6
After 20 minutes, add the apple mixture and stir to combine.
Step 7
Continue to bake for 20 more minutes, stirring halfway through.
Step 8
When the potatoes and apples are browned and the maple syrup has caramelized, remove them from the oven or grill and serve immediately!
