Roasted Potatoes In Golden Garlic Sauce

"Not long after I got to Iceland, I found a batch of old recipes in my belongings I had shipped here. They had been cut from emails I received in Dallas. I could not begin to guess where they originated, but I knew why this particular recipe had been saved for my cooking life here. My DH (in truth all Icelanders) view potatoes as a nearly religious requirement of each meal, much like I view garlic as 1 of God's greatest food gifts to mankind. Step by Step Method

Step 1

Preheat oven to 425F.

Step 2

Put 3 tbsp olive oil in the bottom of a 9x13 in baking dish & heat in oven for 5 min.

Step 3

Add potatoes & toss to coat w/oil. Roast potatoes (turning occasionally) for 30-35 min or until tender.

Step 4

While potatoes are roasting, prepare garlic sauce: In a small skillet, heat remaining 3 tbsp olive oil & add sliced garlic cloves. Cover & cook over very low heat for 7-10 min or until garlic is tender.

Step 5

Sprinkle w/sugar & stir until garlic is caramelized. Add balsamic vinegar, white wine & basil. Simmer for 2 min.

Step 6

Spoon sauce over roasted potatoes, sprinkle w/ground black pepper & parsley. Serve immediately.

Oh my...these are a wee bit of wonderful! One bite is sweet and the next savory. I cut the recipe to 3 serves and the two of us ate it all! I did have to use dried basil as I was not able to get fresh is our small town at this time of year. Thank you TwisSis for a keeper recipe! Made for Billboard Recipe Tag.

Excellent potatoes! The potatoes crisp up beautifully and on their own with salt and pepper is pure crisp heaven, but the sauce is also heaven. It's so packed with flavor! Combining the two made it the perfect marriage. Thank you Twissis for sharing. Made it for DownHomeCooking.

I cut my potatoes into 1 inch cubes, and they turned out really crisp and beautifully browned. I hesitated to toss the sauce over because they were just so "perfect". I separated a few and tossed the rest in the sauce. Both were delicious. The sauce is great...even drug the one's I separated through it. Just wanted them crisp. LOL. Made for your win in Football tag. Congratulations!!

Super good potatoes. Made these exactly as written, except subbed more fresh basil for the parsley at the end. Everyone wanted more, so next time will double the recipe!
