Step 1

Preheat oven to 400 degrees F. Grease a baking sheet.

Step 2

Break off tough ends of asparagus. Place asparagus on a large place and drizzle with olive oil (use as much oil as you like) then sprinkle the zest over asparagus; toss to coat. Arrange asparagus in a single layer on greased baking sheet.

Step 3

Oven roast until tender (about 15-18 minutes) shaking baking sheet once or twice during cooking time. Season asparagus with salt pepper and sprinkle with lemon juice just before serving.

Even 15 minutes in the oven left my asparagus overcooked and limp, and it took me about twice as long to produce enough zest for the recipe as the prep time lists. If it weren't for those two things, this would be a five-star review, because the taste was amazing and this may well become one of our favourite ways to fix asparagus.

Love Lemon on Asparagus! I like my veggies still crisp so 10 minutes in the oven was perfect. I only used a light spray of olive oil and they sure were perfect. Thanks Kitten for a lovely addition to my dinner
