Step by Step Method

Step 1

Cook bacon until crispy in a skillet. Remove to plate, leave some fat in skillet.

Step 2

Add in onion slices to hot bacon fat, cook until softened, about 4 minutes; remove to a bowl. Add mushrooms to the skillet then add wine and 2 tablespoons water. Cook and stir until mushrooms are soft and liquid has evaporated, about 5 minutes.

TO ASSEMBLE SANDWICH


Step 3

Lay 2 bread slices flat, and top one slice with cheese, roast beef, onion, and mushrooms.

Step 4

Break 2 bacon slices in half and place over mushrooms. Top with remaining bread slices Spread the top and bottom bread slice with some soft butter.

Step 5

Wipe the skillet. Place sandwich in the skillet, buttered side down. Cook until lightly browned, about 2 minutes per side, pressing down with a spatula to seal.
