Step by Step Method

Step 1

Dissolve yeast in warm water, blend in ginger and 1 T sugar. Let stand in warm place until mix is bubbly (about 15 minutes).

Step 2

Stir in remaining sugar, salt, milk and oil.

Step 3

Mix in flour one cup at a time. Place dough in well greased 2 lb coffee can. Let rise until doubled in size. Bake 60 minutes or until top is brown.

This is a lovely white bread that should be in everyone’s repertoire. It’s the perfect bread especially for sandwich making, soft crumb, spongy texture with a wonderful flavor. It did proof a bit longer than it should due to me handling too many things at the same time. I followed all as directed, but because I don’t have a 2 lb. coffee can, I used a double-sized loaf pan instead and it worked great. Thanks so much, Dee, for sharing your mom’s bread. I’ll be making this often, especially because we make sandwiches regularly.
