"Every time I make one of his recipes, I miss my old friend more. This is one of his better ones, although I highly recommend spending the extra money to get pre-shelled pistachios. Or do what I do, and sit in front of the TV with two bowls. It takes an awful lot of them before you have enough. I often use all pistachios instead of half bread crumbs, and it's amazing."

Step by Step Method

Step 1

Combine bread crumbs, 1/4 cup pistachios, cheese, parsley and mustard in a shallow dish.

Step 2

Dip fish in milk and then into crumb mixture; place in a shallow greased baking dish.

Step 3

Drizzle fish with butter; sprinkle with remaining pistachios.

Step 4

Bake at 450F for 10 minutes, or until fish flakes easily when tested with a fork.

Excellant baked fish, just had a wee problem making the coat stick, i finally just laid the fish on the tray and spooned the coat on it. It was delicious, but i goofed up, i thought i had a can of pistachios , it turned out to be macadamias, in any case they worked beautifully. loved the parmesan and the dry mustard really added lovely flavour. thanks for posting.
