April 07, 2019
"Bolognese Sauce is an Italian-style sauce and normally takes several hours to make. This quick sauce is perfect for when you need something right now. The tomato base should take about 35 min to create and is not included in the total cook time. The tomato sauce can be made ahead of time and can be refrigerated for a couple of weeks or frozen for several months."

Heat the oil in a large pot over medium-high heat. Add the onions, carrots, celery and pepper flakes and saute until vegetables soften (5 to 7 minutes).
Stir in the tomatoes. Use the wine or water to rinse out the cans and add to the pot. Bring to a simmer. Reduce the heat to medium-low and simmer until the sauce thickens (about 15 minutes).
Taste the sauce and season with salt and pepper to taste. Add enough tomato paste so that you’ve made a thick, full-bodied sauce, not soup. Simmer to blend the flavors (about 5 minutes).
Cool the sauce and divide it among 3 sealed containers.
When ready to make Bolognese Sauce, heat a large sauce pan over medium-high heat with two teaspoons olive oil added.
Saute the prosciutto until it is browned (about 3-5 minutes).
Add the meat and cook until it is brown and broken up then drain the excess fat. Add a quart of the Tomato Sauce and simmer until the sauce thickens (about 10 minutes).
Stir in the heavy cream and simmer a couple of minutes longer.
While the meat is sauteing, cook up some pasta, gnocchi or ravioli following the package instructions. Once you’ve drained the cooked pasta, return it to the pot and toss with one-third of the sauce. Divide pasta into 4 servings and plate.
Top each with a portion of the remaining sauce, Parmesan cheese (optional), and a little bit of extra-virgin olive oil (optional).
