Step by Step Method

Step 1

Soak beans overnight.

Step 2

Drain water and refill pot. Boil 10 minutes.

Step 3

Skim off foam. Drain beans but Keep water.

Step 4

In bean pot or dutch oven put in all ingredients. Add water from beans to cover beans and 1 or 2 more inches above. Keep leftover water for later.

Step 5

Stir everything well.

Step 6

Cover and put in 225F oven for 8 hours.

Step 7

Check on them occasionally to see if more water is needed to keep beans covered so they don't dry out. Near end they don't need to be fully covered. Ready when beans are soft.

These were very tasty beans that we enjoyed very much. I actually had the opposite problem of them drying out, though. After cooking for 8 hours, there appeared to be a lot of liquid, so I put them on the stovetop to simmer and reduce. Surprisingly, I also had to add salt and pepper. I thought the salt pork would add enough, but it really did need more. Thanks for sharing. Made for Culinary Quest 2015 by a Toasted Tourist.
