Step by Step Method
Step 1
In a medium bowl stir together flour, baking powder, baking soda, cornstarch, salt, garlic powder and cayenne pepper.
Step 2
In a large bowl, beat together eggs and milk until smooth. Mix in beer. Stir in flour mixture. Mixture will be thick, but you can add more beer if you feel it is too thick.
Step 3
In a deep fryer or a large heavy pan, heat oil to 375 degrees F.
Step 4
Coat fish in batter and submerge in hot oil. Fry until golden brown, about 4 to 5 minutes. Cook in small batches until all fish is cooked.
