Step 1

Lemon Tea Cake:

Step 2

Cream together butter, sugar and brown sugar.

Step 3

Add eggs one at a time.

Step 4

Sift together flour,salt and baking soda.

Step 5

Cut the lemon in quarters and remove seeds.

Step 6

Chop finely or grind with dates.(I would zest and add fruit, avoiding the pith),(food processor)

Step 7

Place ground lemons and dates in a bowl and add 1/2 of the flour mix.

Step 8

Mix lightly with fork.

Step 9

Fold in sifted mixture and fruits alternately with sour cream.

Step 10

Bake in two 8' greased and floured cake pans at 350º for 25 minutes.

Step 11

Cool thoroughly and frost.

Step 12

Lemon Tea Cake Frosting:

Step 13

Cream butter.

Step 14

Gradually add powdered sugar.

Step 15

Add sour cream, vanilla, and lemon juice.

Step 16

Beat well and frost cake.
