Ingredients

The ingredients are:
  • Cake:
  • 1/2 cup butter ,softened
  • 1/2 cup sugar
  • 1/3 cup brown sugar, packed
  • 2 eggs
  • 1 cup flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 lemon
  • 1 cup dates,pitted, chopped
  • 8 ounces sour cream,(1 cup)
  • Frosting:
  • 1 tablespoon butter
  • 1 1/2 cup powdered sugar, sifted
  • 1/4 ounce sour cream,(1 tablespoon)
  • 1/2 teaspoon vanilla
  • 1 tablespoon lemon juice, to taste

How to Make

  • Step 1: Lemon Tea Cake:

  • Step 2: Cream together butter, sugar and brown sugar.

  • Step 3: Add eggs one at a time.

  • Step 4: Sift together flour,salt and baking soda.

  • Step 5: Cut the lemon in quarters and remove seeds.

  • Step 6: Chop finely or grind with dates.(I would zest and add fruit, avoiding the pith),(food processor)

  • Step 7: Place ground lemons and dates in a bowl and add 1/2 of the flour mix.

  • Step 8: Mix lightly with fork.

  • Step 9: Fold in sifted mixture and fruits alternately with sour cream.

  • Step 10: Bake in two 8' greased and floured cake pans at 350º for 25 minutes.

  • Step 11: Cool thoroughly and frost.

  • Step 12: Lemon Tea Cake Frosting:

  • Step 13: Cream butter.

  • Step 14: Gradually add powdered sugar.

  • Step 15: Add sour cream, vanilla, and lemon juice.

  • Step 16: Beat well and frost cake.
