"Mrs. Breedlove kept a hotel in Illinois in her younger days. Lincoln stayed there weeks at a time when engaged in court trials. Mrs. Breedlove stated Lincoln, or "Honest Abe" as they called him loved her lemon custard pies Milwaukee Journal", Wed, Nov. 19, 1913, "The Milwaukee Journal May need 2 tablespoons butter whisked in for taste."

Step by Step Method

Step 1

In a medium saucepan combine sugar, the cornstarch and salt

Mix well.

Step 3

Whisk in lemon juice and water until combined.

Step 4

Whisk in egg yolks. Bring to a boil over medium heat, stirring constantly.

Step 5

Boil 1 minute, then remove from heat and stir in lemon zest.

Step 6

Pour into baked pie crust.

Step 7

Preheat oven to 350 degrees F.

Step 8

In a medium bowl, with an electric mixer, beat egg whites until soft peaks form. Add remaining 3 tablespoons sugar and continue beating until stiff peaks form. Spread meringue over pie filling, sealing to edges of crust.

Step 9

Bake 12 to 15 minutes, or until golden. Let cool 6 hours, then slice and serve.
