  • 3/4 cup sugar

  • 4 egg yolks
  • 1 lemon, juice and zest
  • 1 tablespoon cornstarch
  • 1 baked (7 1/2 ounce) pie crust (9 inch)
  • 4 egg whites, beaten stiff
  • 3 tablespoons sugar

How to Make

  • Step 1: In a medium saucepan combine sugar, the cornstarch and salt

  • Step 2: Mix well.

  • Step 3: Whisk in lemon juice and water until combined.

  • Step 4: Whisk in egg yolks. Bring to a boil over medium heat, stirring constantly.

  • Step 5: Boil 1 minute, then remove from heat and stir in lemon zest.

  • Step 6: Pour into baked pie crust.

  • Step 7: Preheat oven to 350 degrees F.

  • Step 8: In a medium bowl, with an electric mixer, beat egg whites until soft peaks form. Add remaining 3 tablespoons sugar and continue beating until stiff peaks form. Spread meringue over pie filling, sealing to edges of crust.

  • Step 9: Bake 12 to 15 minutes, or until golden. Let cool 6 hours, then slice and serve.
