Step by Step Method
Step 1
In a small pot, combine the quinoa and stock and bring to a boil.
Step 2
Reduce the heat to a simmer and cover.
Step 3
Cook for 15 minutes or until the liquid has been absorbed.
Step 4
Let cool completely.
Step 5
In a large bowl, combine the quinoa with the remaining ingredients.
Step 6
Toss to mix thoroughly.
Step 7
Serve chilled.
Step 8
It didn't have seasoning (crazy) but I added it season to taste.
