Ingredients

The ingredients are:
  • 7 ounces dry quinoa, (1 cup)
  • 2 cups vegetable stock
  • 1/2 cup cucumber, diced
  • 1/2 cup tomato, diced
  • 2 tablespoons red onion, minced
  • 2 green onions, thinly sliced
  • 2 tablespoons fresh cilantro, minced
  • 1 tablespoon jalapeƱo, minced, (it had teaspoon)
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/8 teaspoon freshly ground black pepper

How to Make

  • Step 1: In a small pot, combine the quinoa and stock and bring to a boil.

  • Step 2: Reduce the heat to a simmer and cover.

  • Step 3: Cook for 15 minutes or until the liquid has been absorbed.

  • Step 4: Let cool completely.

  • Step 5: In a large bowl, combine the quinoa with the remaining ingredients.

  • Step 6: Toss to mix thoroughly.

  • Step 7: Serve chilled.

  • Step 8: It didn't have seasoning (crazy) but I added it season to taste.
