Step 1: In a small pot, combine the quinoa and stock and bring to a boil.
Step 2: Reduce the heat to a simmer and cover.
Step 3: Cook for 15 minutes or until the liquid has been absorbed.
Step 4: Let cool completely.
Step 5: In a large bowl, combine the quinoa with the remaining ingredients.
Step 6: Toss to mix thoroughly.
Step 7: Serve chilled.
Step 8: It didn't have seasoning (crazy) but I added it season to taste.
