Step by Step Method

Step 1

Heat oil in a medium saucepan over medium heat. Add corn and red pepper and sauté for 2 minutes allowing the corn and pepper to soften slightly

Add spices and cook for 1 minute more.

Add water and cook for 2 minutes more, or until the water has evaporated

Add sautéed vegetables and beans to rice and mix well.

Remove from heat adding lime juice, cilantro, salt and pepper to taste
