  • Rice:
  • 14 ounces cooked brown rice,(2 cups)
  • 1 can (15 ounces) black beans, drained
  • Saute:
  • 1 tablespoon olive oil
  • 2 cups frozen corn
  • 1/2 cup red bell pepper, minced
  • 1/4 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 4 tablespoons water
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper,to taste

How to Make

  • Step 1: Heat oil in a medium saucepan over medium heat. Add corn and red pepper and sauté for 2 minutes allowing the corn and pepper to soften slightly

  • Step 2: Add spices and cook for 1 minute more.

  • Step 3: Add water and cook for 2 minutes more, or until the water has evaporated

  • Step 4: Add sautéed vegetables and beans to rice and mix well.

  • Step 5: Heat

  • Step 6: Remove from heat adding lime juice, cilantro, salt and pepper to taste
