Step 1

In a large soup pot

Step 2

Saute diced onions and red pepper over medium heat in 2 Tablespoons butter until onions are clear.

Add leftover mashed potatoes ,whipping cream and milk.

Simmer dont boil until hot

Step 5

Add very last swirl in bacon

Step 6

Season with salt and pepper to taste.

Step 7

Serve with toppings of sour cream, grated cheddar cheese and chives.
