Step 1: In a large soup pot
Step 2: Saute diced onions and red pepper over medium heat in 2 Tablespoons butter until onions are clear.
Step 3: Add leftover mashed potatoes ,whipping cream and milk.
Step 4: Simmer dont boil until hot
Step 5: Add very last swirl in bacon
Step 6: Season with salt and pepper to taste.
Step 7: Serve with toppings of sour cream, grated cheddar cheese and chives.
