  • 1 cup onion, diced
  • 1 cup red bell pepper, diced
  • 2 tablespoons butter
  • 6 cups mashed potatoes
  • 1/2 pound bacon, cooked and crumbled
  • 2 cups milk
  • 8 ounces heavy cream (1 cup)
  • 1 /2 teaspoons kosher salt
  • 1/4 teaspoon fresh ground pepper,to taste
  • Topping:
  • 4 ounces sharp Cheddar cheese, grated
  • 2 tablespoons fresh chives, minced
  • 4 ounces sour cream

How to Make

  • Step 1: In a large soup pot

  • Step 2: Saute diced onions and red pepper over medium heat in 2 Tablespoons butter until onions are clear.

  • Step 3: Add leftover mashed potatoes ,whipping cream and milk.

  • Step 4: Simmer dont boil until hot

  • Step 5: Add very last swirl in bacon

  • Step 6: Season with salt and pepper to taste.

  • Step 7: Serve with toppings of sour cream, grated cheddar cheese and chives.
