Step by Step Method

Step 1

Heat oil on medium heat in a large pot.

Step 2

Add next 4 ingredients.

Step 3

Cook, stirring occasionally, for 5 minutes, or until onions are tender.

Step 4

Add potatoes and stock. Bring to a boil, cover and lower heat.

Step 5

Simmer 15 minutes, until potatoes are tender.

Step 6

Add Milk and cook for an additional 5 minutes.

Step 7

Puree half the soup.

Step 8

Return to pot and combine well.

Step 9

Stir in dill.

Step 10

Add salt to taste.

Really nice chowder! Flavorful and comforting. Loved the dill flavor. Great with crusty bread. I made this with baby gold potatoes halved, and a few baby reds. I also used water with chicken bouillon, extra dried dill, and subbed 1 cup of sour cream and 1 cup of half and half for the evaporated milk. I pureed half as directed, and then used a potato masher lightly on the larger chunks of potato that were left. I think this would be great with sausage or bacon in in it too. Made for the Billboard recipe tag game.

Wonderful soup! My hubby doesnt care for celery and carrots in soup so I used my Gordon Ramsey chopper and minced the onion, celery, and carrots. Used canola oil to saute the vege's and instead of vegetable stock used chicken since that is what I had on hand. Hubby accidentally bought sweetened condensed milk instead of evaporated and with the help of Felix4067 subbed sour cream mixed in skim milk which worked out great. Loved the dill flavor! Did add some fresh cracked black pepper along with the salt, love pepper. Hubby added some shredded cheddar cheese to his bowl and I just sat back and enjoyed my soup. Will definitely make this soup again! Thank you Bea for sharing this recipe! Made and reviewed for the Recipebook Tag Game in the Game Forum.
