Step by Step Method

Step 1

Place all ingredients, except fava beans, in a large stock pot.

Step 2

Cover with water and bring to a boil.

Step 3

Reduce heat and simmer, adding water as needed, until vegetables are tender.

Step 4

Remove hocks and set aside until cooled enough to handle.

Step 5

Add rinsed fava beans.

Step 6

Remove meat from the hocks and return to stock-pot.

Step 7

Taste and adjust seasoning.

I had to make a couple of substitutions...used smoked hocks and black beans (turtle beans)instead of the favas. It is raining heavily here today and this is just the right soup to warm the body and soul! Wonderful flavour and lovely textures. Served this with rosemary buttermilk biscuits.
