Step 1: Place all ingredients, except fava beans, in a large stock pot.
Step 2: Cover with water and bring to a boil.
Step 3: Reduce heat and simmer, adding water as needed, until vegetables are tender.
Step 4: Remove hocks and set aside until cooled enough to handle.
Step 5: Add rinsed fava beans.
Step 6: Remove meat from the hocks and return to stock-pot.
Step 7: Taste and adjust seasoning.
