Step by Step Method
Step 1
Preheat oven to 350F.
Step 2
Skin the black skinned plantains, cut in half lengthwise, cut again lengthwise until you have 12 strips.
Step 3
Cut the strips in half crosswise.
Step 4
Arrange 8 strips in a buttered shallow baking dish and brush liberally with butter, top with 8 more strips and butter liberally again, arrange remaining 8 strips on top and brush with butter once more.
Step 5
Sprinkle brown sugar and lime juice over all.
Step 6
Pour over dark rum.
Step 7
Cover the dish with foil and bake for 1 hour or until done to your liking.
