Step by Step Method
Step 1
Grease a loaf pan; set aside.
Step 2
Mix the eggs with sugar until the sugar is dissolved. Add vegetable oil, vanilla, and zucchini; mix.
Step 3
Add flour, cinnamon, baking powder and baking soda. Mixture will look thick, but don't worry the zucchini provides the moisture.
Step 4
Mix until all is incorporated. Pour into a greased loaf pan. Place in preheated oven (350) for 45 minutes or until it tests done.
Step 5
Makes 1 loaf pan.
