Step by Step Method

Step 1

Place cashews in bowl cover with 3 inches water soak over night. Drain liquid.

Rinse cashews under cold water; drain.

Puree oil, lemon juice, tahini, salt and water with cashews, about 6 minutes or until creamy.

Place strainer line with triple layer cheese cloth. Put cashew mixture in bowl, fold over cheese cloth, form 6 inch oval loaf.

Step 5

Twist cloth secure with rubber bands. Put back in strainer over bowl let stand room temp for 12 hours.

Discard liquid

Chill

Step 9

Preheat oven 200 degrees f

Line baking sheet with parchment paper

Unwrap make 7 inch long logs

In cheese clothes

Step 13

Re wrap and secure ends of cheese cloth

And place on baking sheet

Bake 35 minutes or until cheese is set out side but still soft turning every so often

Cool and chill

Unwrap cheese

Sprinkle with peppercorns
