Step by Step Method
Step 1
Mix sugar and salt in small bowl and set aside.
Step 2
Saute butter and maple syrup in a large pan, bring to a boil. Toss in nuts and sugar, remove from heat.
Step 3
To serve, fan pear slices on salad plates, dribble warm sauce and nuts over pears and sprinkle with gorgonzola.
Step 4
Alternate Method: Transfer nuts from pan to baking sheet and bake at 350 degrees for about seven minutes, or until fragrant.
Step 5
For green salad, tear butter lettuce and arrange it and pears on individual salad plates. Follow recipe above, removing walnuts when done, reserve liquid in pan, adding oil and vinegar. Increase heat to medium and cook til hot through, pour on salads. Sprinkle nuts and cheese on top, serve immediately.
