"A perfect 'meatless' Monday dish. And, for those meat lovers ... I like to serve some grilled Italian sausage on the side. Really quick, easy, and delicious. Add a salad on the side; and, it is a perfect weeknight meal. This also makes a great side dish as well."

Step by Step Method

Step 1

Sauce ... Add the peppers, onion, garlic, broth, parsley, basil, red pepper flakes, salt, pepper, and parmesan to a blender; then, pulse to puree until smooth.

Step 2

Transfer the sauce to a pot, and bring to medium heat (do not let it boil), IMMEDIATELY reduce to medium low heat. You just want to warm it up. Simmer 5-10 minutes just until the cheese is melted. As the sauce simmers, cook the pasta.

Step 3

Pasta ... Cook the pasta according to package directions, in plenty of salted water. Drain, and reserve some of the pasta water on the side. Return to the pasta to the pot, off the heat.

Step 4

Finish ... Add the red pepper sauce, ricotta, olives, parsley and basil to the pasta; and, toss to combine. If the pasta seems dry; add a bit of the reserved pasta water - you want a nice creamy sauce. I usually add about 1/4 cup. Also, season with salt and pepper; only if necessary.

Step 5

Serve and ENJOY! ... For the meat lovers - a couple of grilled Italian sausages are the perfect side. And, for cheese lovers; add more parmesan as a garnish! A nice salad on the side is what I would do. Super easy and super quick.
