"I love pearl couscous it has such a nice moist flavor. The flavor of this dish is delicious with the cheese (not green container cheese) please. You can exchange the bacon for procuitto if you wish."

Step by Step Method

Step 1

Heat oil over medium heat in a saucepan. Add onions and bacon and cook for 3 minutes, stirring continually. Do not brown.

Step 2

Pour in chicken or vegetable stock and stir while bringing to a boil. When boiling, add in the couscous and salt and pepper and stir. Keep at a low simmer

Step 3

Add in peas and cover your saucepan and cook for about 10 minutes. You may have to add a bit more stock during the 10 minutes. You don't want it to dry out before its cooked. Before serving add in the parmesan, butter and parsley and Enjoy

Absolutely loved it but 3 of us were battling to get through it all and it was our only side so as is if serving other sides would say 4 to 6 and if it was the only side 4 but that it us. The only change I made was to sub finely grated cheddar for the parmesan as my lot will not eat parmesan they refer to it as stinky spew cheese and had to omit the parsley as our recent heat wave has taken a toll on the herbs, thank you FrenchBunny for a lovely recipe, made for Alpabet Soup tag game.

I really loved this and my son did too. The cheese and shallots really flavored it up good and it was a great veggie to have with pork chops. This will be repeated!
