"I mastered a quick recipe for a gluten free / dairy free pancake that can be whipped up very quickly. Notice i say "a" pancake. Its a big one, but I'm the only one I cook for and this works. Adjust ingredients proportionately for more servings (except egg - I would say one egg per 2 servings)."

Step by Step Method
Step 1
Heat pan to medium.
Step 2
Melt coconut oil in pan.
Step 3
Mix all ingredients.
Step 4
Add and mix in melted coconut oil to batter saving some behind for cooking.
Step 5
Pour batter into hot pan.
Step 6
Optional - add fruit to pancake as cooking (I usually put in some frozen blueberries but have used banana too).
Step 7
Flip when starting to bubble and brown.
Step 8
Serve when the second side is brown.
