Ingredients

The ingredients are:
  • 1/4 cup gluten-free flour
  • 1/4 cup milk (dairy free milk, I used almond or coconut)
  • 1 large egg
  • 1 teaspoon coconut oil
  • 1/2 teaspoon honey
  • Salt, dash
  • 1/8 teaspoon baking powder
  • 1/8 teaspoon xanthan gum

How to Make

  • Step 1: Heat pan to medium.

  • Step 2: Melt coconut oil in pan.

  • Step 3: Mix all ingredients.

  • Step 4: Add and mix in melted coconut oil to batter saving some behind for cooking.

  • Step 5: Pour batter into hot pan.

  • Step 6: Optional - add fruit to pancake as cooking (I usually put in some frozen blueberries but have used banana too).

  • Step 7: Flip when starting to bubble and brown.

  • Step 8: Serve when the second side is brown.
