Step by Step Method

Step 1

Mix flour, cornstarch, salt, baking powder and baking soda in medium bowl.

Step 2

Measure buttermilk,egg yolk , milk and vegetable oil in a 2-cup measuring cup; mix and set aside.

Step 3

Beat egg white in a small bowl with an electric mixer to almost soft peaks. Sprinkle in sugar and continue to beat until white is glossy.

Step 4

Beat in vanilla extract.

Step 5

Add zest and cranberries

Fold in

Pour wet ingredients into dry ingredients and whisk until just mixed.

Step 8

Add egg white to batter in dollops.

Step 9

Fold in with a spatula until just incorporated.

Delicious waffles. Lots of flavor and great texture. I may try using fresh cranberries next time. Never used cornstarch in waffles.
