  • When selecting dried cranberries, make sure to get ones that are not sweetened with added sugar.
  • For the best results, use freshly squeezed orange juice and zest for the orange zest.

  • Substitute almond milk for buttermilk: Almond milk is a great alternative for those with a dairy allergy or intolerance, and still provides a creamy texture and flavor to the waffles.
  • Substitute coconut oil for vegetable oil: Coconut oil is a healthier alternative to vegetable oil, as it is rich in healthy fats and has been linked to numerous health benefits.

Lemon-Blueberry Waffles Replace the orange zest with 2 teaspoons of finely grated lemon zest. Replace the dried cranberries with 2 ounces of dried blueberries (coarsely chopped, 1/2 cup).

Orange-Maple Glazed Bacon - This sweet and savory dish is the perfect accompaniment to Pam Anderson's Cranberry-Orange Waffles. The combination of orange and maple flavors in the glaze perfectly complements the orange zest and cranberries in the waffles, while the bacon adds a salty crunch.

Blueberry-Lemon Compote: This sweet and tart compote is the perfect accompaniment to the Orange-Maple Glazed Bacon and Cranberry-Orange Waffles. The combination of blueberry and lemon flavors in the compote will bring out the sweetness of the orange and maple glaze, while the tartness of the lemon will balance out the salty bacon. The compote also adds a fruity element to the dish that will complement the cranberries in the waffles.

FAQ

Q: How can I make sure the waffles are light and fluffy?

A: To ensure light and fluffy waffles, make sure to mix the wet and dry ingredients until just combined. Do not overmix, as this will result in dense waffles. Additionally, make sure to fold in the egg whites until just incorporated, and do not overmix.

Q: How long should I cook the waffles?

A: The cooking time will depend on your waffle maker and the amount of batter you are using. Generally, waffles should cook for 3-4 minutes until golden brown. Check the waffle maker instructions for more information.

Delicious waffles. Lots of flavor and great texture. I may try using fresh cranberries next time. Never used cornstarch in waffles.
