Step 1: Mix flour, cornstarch, salt, baking powder and baking soda in medium bowl.
Step 2: Measure buttermilk,egg yolk , milk and vegetable oil in a 2-cup measuring cup; mix and set aside.
Step 3: Beat egg white in a small bowl with an electric mixer to almost soft peaks. Sprinkle in sugar and continue to beat until white is glossy.
Step 4: Beat in vanilla extract.
Step 5: Add zest and cranberries
Step 6: Fold in
Step 7: Pour wet ingredients into dry ingredients and whisk until just mixed.
Step 8: Add egg white to batter in dollops.
Step 9: Fold in with a spatula until just incorporated.
