  • 1/4 cup cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup oil (vegetable oil)
  • 1/4 cup buttermilk
  • 1/4 cup milk
  • 1 large egg
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons finely grated orange zest
  • 2 ounces dried cranberries (coarsely chopped, 1/2 cup)

How to Make

  • Step 1: Mix flour, cornstarch, salt, baking powder and baking soda in medium bowl.

  • Step 2: Measure buttermilk,egg yolk , milk and vegetable oil in a 2-cup measuring cup; mix and set aside.

  • Step 3: Beat egg white in a small bowl with an electric mixer to almost soft peaks. Sprinkle in sugar and continue to beat until white is glossy.

  • Step 4: Beat in vanilla extract.

  • Step 5: Add zest and cranberries

  • Step 6: Fold in

  • Step 7: Pour wet ingredients into dry ingredients and whisk until just mixed.

  • Step 8: Add egg white to batter in dollops.

  • Step 9: Fold in with a spatula until just incorporated.
