Step by Step Method

Step 1

Remove peels from clementines or orange (you don't need the fruit only the peels).

Step 2

In a saucepan on high heat add 3 cups of water and bring to a boil. Add peels and the next 3 ingredients (-ginger) and cook for 3 minutes. Remove from heat and let stand for 5 minutes.

Step 3

Return pan to high heat and bring to a boil. Remove from heat and stir in tea. Let stand for 2 minutes.

Step 4

Strain chai through a fine-mesh sieve into 2 glasses. Squeeze in lemon juice and honey as desired.
