Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

In a small bowl, mix marmalade, hoisin sauce, Mrs Dash garlic and herb and grated ginger root. Line a baking dish with heavy-duty aluminum foil. Make sure you don't poke any holes in the foil (trust me!). Place chicken breasts in dish. Carefully loosen membrane under skin from fattest part of the breast, but only loosen it part way down, so it makes a "pocket". Spoon some of the marmalade mixture in that pocket and coat the rest on the outside of the breast.

Step 3

Place in preheated 350 degree F oven, and bake for 1 hour or until temperature in fattest part of breast reaches 165 degrees F internal. Half way through cooking time, spoon the sauce in the bottom of the pan over the chicken.
